Rosé 2022
The grapes were hand harvested and subject to a rigorous sorting process upon arrival at the winery. The grapes were de-stemmed and pressed in a pneumatic press at a low pressure. Fermentation at low temperatures took place in concrete tanks, after which the wine rested on fine lees for six months with occasional bâtonnage to add texture and complexity to the wine.
In the heart of the Papal Provence, perched at a height of 300-350 metres above sea level between Mont Ventoux and the Dentelles de Montmirail chain, the vineyards benefit from a magnificent site and climate. Part of the Ventoux AOP (Protected Designation of Origin), the vineyards extend from the eastern ridge of the Dentelles de Montmirail, which overlooks the little village of Suzette, to the northwest foothills of the Giant of Provence (Mont Ventoux). They also benefit from a wonderful mountain freshness.

We are enjoying it with a selection of the finest sushi, followed by a delicate bowl of ramen.

Quietly pursuing an authentic Benedictine life of work and prayer, the monks of The Abbey of Sainte-Madeleine du Barroux have flourished since the establishment and construction of their monastery. Whilst young men from around France come here to dedicate themselves to the spiritual life, lifting their voices in praise according to ancient Latin chants seven times daily, they also pour their energy into producing wines to the highest standards, and use the knowledge they gain through the study of the land and vines to benefit the small winegrowers in the community around them.
