The Abbey of Notre-Dame de Scourmont
The Trappist brothers of Scormont Abbey, Chimay, have been brewing since 1862. Using their own natural spring water, which impart a unique flavour, the monks were the first monastery to use the official 'Trappist' designation, which safeguards the strict quality standards found in their drinks. As Cistercians of the Strict Observance, the monks live life in silence, totally withdrawn from the modern world. Over time they have developed their products to include their famous cheese as well as expanding the original single line of beer to a total of 7 or 8 when including special brews such as the rare Grand Reserve. Chimay is the most famous of all the Trappist beers and has led the way in having monastic products recognised for their high quality. The abbey uses its significant proceeds to support many charitable institutions and smaller monasteries, as well as employing over 30% of the local town.
