This bright pale gold wine first hits you with a discreet nose that gradually opens with subtle aromas of white flowers, verbena, apricot, pear and white truffle. This is followed by a full mouth whose fat is tempered by a delicate bitterness. Combining vegetable and fresh almond notes and ending with a persistent finish. An unusual and adventurous wine. Produced in small quantities and highly sought after.
Grape variety: 90% Clairette, 10% Roussanne.
Alc. 13.5%. Vegan.

A truly unusual and exquisite white wine, it will delight those who are looking for something unique on their table. Due to the limited production and extraordinary quality it is perfect for important festive events and celebrations or as a unique gift.
This wine comes from a selection of the most beautiful plots of the monastic vineyard, the result of the exclusive work of monks and nuns. This unique cuvée is produced in small quantities and only when the vintage allows it. Abbayes Blanc consists of a clairette from the place called ‘le Rendier’ at the foot of the hill of Saint Madeleine and the ‘Clos de l'Annonciation’ at the place called La Font de Pertus.

Food Pairings
This wine will go very well with delicate fish such as sea bass, swordfish loin, St. Pierre, sole, turbot. It shines with sea bream with fennel.
We enjoyed it with Dover sole, capers, lightly roasted potatoes and green beans. But often we drink it alone.

Whilst young men from around France come here to dedicate themselves to the spiritual life, lifting their voices in praise according to ancient Latin chants seven times daily, they also pour their energy into producing wines to the highest standards, and use the knowledge they gain through the study of the land and vines to benefit the small winegrowers in the community around them.
