A wonderful yellow coloured wine with light green tints. Floral aromas alongside peach and pear bring delight to the drinker. This excellent wine gives homage to the great Burgundian monastic houses.
Grape varieties: 100% Chardonnay.

The abbeys of Cluny and Cîteaux, and their almost 3000 daughter houses, are responsible for the development of the great Burgundian vineyards which produced Chardonnay. Further afield and even to this day these two Burgundian abbeys are responsible for almost all the greatest vintages in the world. In honour of this unparalleled heritage the monks Le Barroux have produced a Chardonnay worthy of this glorious past. Connoisseurs of Burgundian Wines will discover to their delight that this wine can stand shoulder to shoulder with many of its officially labelled AOP sisters to the north.
The harvesting of these grapes is done in the cool of the first light of dawn with each grape strictly inspected for its ripeness and health. The pressing is done at low pressure directly with the clarification of the mush done by cold sedimentation.
The vinification process is done in concrete tanks under controlled temperature: the fermentation is done slowly in order to extract the fresh aromas of the grapes. The wine is then put up on a thin layer of lees over 6 months.
