A beautiful deep maroon colour, Pax Domini Rouge captivates the nose with liquorice, caramel and prunes. Loaded generously with sweetness that envelopes the mouth, accompanied with silky tannins. Slightly peppered at the last, it ends in elegance.

Primarily hand-harvested and strictly sorted, only perfectly healthy and ripe grapes are kept for this wine. Using a classical vinification process, the initial maceration takes place in concrete tanks for 20 days once the stems have been removed. Extracting and straining by délestage occurs at the beginning of fermentation, followed by some light stirring preventing the formation of hard tannins. Aged for 18 months before being bottled, as with every Via Caritatis wine, Pax Domini was overseen by the acclaimed oenologist Philippe Cambie.
The maintenance and service of the local ecological systems are key to the monks' conscientious wine-growing methods. The monks strive to let nature produce its fruits in its own time, ensuring that the land remains fertile for future generations.

We coupled this wine with a delicious rack of lamb, a side of baked beetroot and peas.

Whilst young men from around France come here to dedicate themselves to the spiritual life, lifting their voices in praise according to ancient Latin chants seven times daily, they also pour their energy into producing wines to the highest standards, and use the knowledge they gain through the study of the land and vines to benefit the small winegrowers in the community around them.
