This wine reveals itself through delicate and complex smells, light touches of sweet white fruits, exotic fruits and touches of liquorice and mint. The harmonious palate brings together both a round and cool taste. Hints of baked cake and a touch of toasted almond can be found in the aftertaste. Overall mature and balanced, it will surprise you in both its boldness and refined taste.
Grape varities: 70% Clairette, 30% Roussanne.

Lux De Cælo
Blanc 2020
Primarily hand-harvested and strictly sorted, only perfectly healthy and ripe grapes are kept for this wine. Great care is taken when moving the grapes to avoid premature crushing. Cold pressing is then done directly into a must with the seeds, skins and stems. For vinification, stainless steel tanks and controlled temperatures are used. The fermentation process is deliberately slow to tease out the specific aromas of these varieties. After mixing, the wine is 'sur lie' for 6 months. During this time, part of the Roussanne grape is seperately fermented in French oak barrels, and 'sur lie' using the batonnage stirring style before being added to the rest of the mix before bottling. As with every Via Caritatis wine, Lux De Cælo was overseen by the acclaimed oenologist Philippe Cambie.

Food Pairings
Perfect with all kinds of fish in sauce but also with white meat such as veal blanquette or with sweetbreads. A sublime marriage with cheeses, in particular pressed cooked cheeses (such as Beaufort or Comté), or a goat's cheese crotin.
We enjoyed this wine with a light selection of sardines, olives and a tomato salad.
